Are soups your comfort food? Then, you ought to try Vietnamese crab soup. It is a bowl of goodness and flavors. If you love seafood and Vietnamese cuisine, then this Vietnamese crab soup is a delight to your taste buds. You have enjoyed  pictures so far, wait till you slurp Bun Rieu because it is that delicious.

It turns out that making Vietnamese crab soup is not as difficult as you would expect if you have all the ingredients. At least, it will save you multiple visits to your favorite Vietnamese restaurant. Yes, there is a bit of a hassle, but when the end result is mouthwatering, you don’t mind all the hard work.

Ingredients For Bun Rieu Cau

For Broth

  • 2 packets of rice noodles
  • 5 quarts water
  • 1.5 pounds pork neck bones
  • 4 large tomatoes
  • 3 tablespoons seasoned crab paste
  • 1 pound head-on shrimp
  • 1 tablespoon tamarind powder
  • 1 tablespoon black pepper
  • 2 tablespoons salt
  • 3 tablespoons sugar
  • 6 quarts water

For Meatballs

  • 0.5 pounds ground pork
  • 1 pound lump crab meat
  • 2 pounds peeled shrimp (from the broth step)
  • 5 large eggs
  • 2 shallots
  • 1 bunch green onions
  • 1 white onion
  • 1.5 teaspoons sugar
  • 1 teaspoon shrimp paste
  • 3 tablespoons seasoned crab paste
  • 1 teaspoon salt
  • 1.5 cups water
  • 1 bunch cilantro (optional)
  • 3 large limes (optional)
  • fried tofu (optional)
  • bean sprouts (optional)
  • chili sate (optional)

Bun Rieu Cau Recipe

  1. Put 5 quarts water in a pot for boiling. Add noodles when the water is boiling and cook until they are al dente. Strain the noodles and rinse them under cold water. 
  2. Now add pork bones in a stockpot and add 5 quarts of water to it for making stock. Boil the water for a few minutes and then discard the water. Add fresh water to the bones and boil for longer time this time to create a broth. The longer you boil, the rocher the broth will be.
  3. Peel the shrimp and put heads and shrimp shells into the broth made in the last step. Boil it for 20 minutes until the water turns red. Remove pork bones and shells from the broth.
  4. To this broth, add 3 tbsp of crab paste, 1 tsp of shrimp paste, 3 tbsp of sugar, 2 tbsp of salt, and 1 tbsp of black pepper. Let it boil for a few minutes.
  5. Add the tomatoes in the last. Cut them into quarters before adding.

Recipe for Meatballs

  1. In a mixer, grind 2 lbs of peeled shrimp, 5 eggs, 3 tbsp of crab paste, 1 tsp of shrimp paste, 2 shallots, 1 white onion and green onion each, 1.5 tsp of sugar into a fine paste.
  2. Take crab meat in a bowl and gently coat it with shrimp paste until uniform.
  3. Take the meatball mixture freestyle in a spoon and put it in boiling broth. Once the meatballs start floating, they are done cooking. You can also add tofu at this point.

For Toppings

Chop some green onion and cilantro for garnishing. Cut white onion into thin slices and quarter the lime.

Assembly of Vietnamese Crab Soup

In a bowl, put some noodles and add garnishing. Add soup with tomatoes and meatballs.  Squeeze some like on top and add salt to taste.
