You don’t often make time for delicious snacks, and when they are zucchini garlic bites, you don’t even waste a second waiting. Moreover, these snacks don’t fall in the junk food category. Zucchini garlic bites are crispy, healthy, and easy to prepare. 

Most of us avoid such delicious snacks for the extra calories they add to our diet. However, zucchini garlic bites are made from low-carb veggies that make these bites a healthy breakfast and a quick snack.

Zucchini garlic bites recipe:

Ingredients include:

  • 1 cup zucchini, grated and wrung out
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup Parmesan cheese, grated finely
  • 1 clove garlic, grated
  • 1 teaspoon fresh chopped basil
  • 1 teaspoon fresh chopped oregano
  • 2 tablespoons fresh chopped chives
  • 1 tablespoon fresh chopped parsley
  • Salt and pepper
  • Marinara sauce as a dip

Preparation:

Preheat the oven to about 400? F (200°C). Coat a baking sheet with a thin layer of olive oil lightly.

To make the bites crispy, squeeze out as much moisture as possible from the zucchini. Then grate the zucchini using a food processor or manual grater. Place the shredded zucchini in a kitchen towel and wring out some more moisture.

Now grate some garlic and mix all the ingredients well. Make small balls from the mixture and place them on the prepared baking sheet. You will end up making around 15 such balls. Finally, bake for about 15 minutes, until their color turns golden brown, and serve them with marinara sauce.
