You may not have been into cooking or baking before lockdown, but you can’t deny that the pandemic made you try your hand at this art form. So, to most of us, cooking and baking don’t as difficult as they used to seem before. Additionally, they don’t only make you feel accomplished and healthy, but also act as a great stress buster. So, in continuation to that trip, we have brought to you yet another recipe of delicious and healthy carrot cake muffins. Take a look:
Ingredients needed for carrot cake muffins:
- 3/4 cup water
- 2 & 1/4 cups regular flour
- 2 eggs
- 1/3 cup vegetable oil
- 1 cup grated carrots (about 2–3 medium carrots)
- 1 & 1/2 tbsp baking powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 3/4 tbsp ground ginger
- 3/4 tbsp salt, 1 & 1/2 tbsp cinnamon
- 1/4 tbsp baking soda
Ingredients needed for the cream cheese filling:
- 1/2 tbsp vanilla
- 10-ounce of softened cream cheese
- 1/4 cup +1 tbsp of sugar
Topping Ingredients:
- 1 cup regular flour
- 1/4 tbsp salt
- 2/3 cup sugar
- 1/2 cup unsalted butter-melted
- 1 tbsp cinnamon
Glaze Ingredients:
- 1/4 cup sugar
- 1 tbsp milk
Preparation:
Start with preheating the oven to 400°F, then keep a standard cupcake pan with paper liners ready and set aside.
The Streusel topping: Take a medium bowl and mix 1 cup of all-purpose flour, 1/4 tbsp salt, 1 tbsp cinnamon, and 2/3 cup of sugar. In the next step, add 1/2 cup melted unsalted butter and stir it until the mixture becomes crumbly, and then set aside.
Cream cheese filling: Take another bowl and beat together the cream cheese, vanilla, and sugar until smooth, and set aside.
For the muffins: Take a large bowl and mix all the listed dry ingredients in the making of the muffins. In another bowl, whisk together the eggs, water, and oil. Then, pour the egg mixture into the dry ingredients. Finally, fold in the grated carrots and stir the mixture thoroughly.
Now, into each cup of the pan, drop a bit of batter and spread it around to cover the bottom. Place 1 tbsp of filling in each and cover with more batter to fill the cups 3/4 full. Finally, add the streusel topping on top and bake for about 20 minutes.
After that, remove the muffins from the oven, let them cool and transfer them to a cooling rack. To make a glaze, mix 1 tbsp of milk with 1/4 cup powdered sugar, and drizzle over the muffins.
